Gheppio is a great red wine of international character, produced with grapes owned by vineyards cultivated with very low yield per hectare, located between Cergneu di Nimis and Attimis. The blend consists of 40% Merlot, 30% Refosco and 30% Cabernet Franc and Cabernet Sauvignon. The harvest takes place at different times, between the beginning and the end of October, to harvest each grape at optimal ripeness. Fermentation on the marc in truncated conical oak vats French of 50 hl for over thirty days, followed by a slow maturation of over 18 months in new barriques, also these of oak French Allier. Then Kestrel matures in the bottle for another six months.
