Champagne is one of the few wines to which an inventor, the Benedictine abbot Dom Pierre Pérignon, has been attributed, although there are different versions of the history of its origin.
The wines of the Champagne region were known since the Middle Ages; They were produced mainly by the monks of the numerous abbeys in the region, who used it as a mass wine. But even the French rulers greatly appreciated these wines, fine and light, so much so that they offered them as a sign of homage to the other European rulers. However, these were mainly still wines, therefore without foam, and reds.
Around 1670, Pierre Pérignon, a young Benedictine monk, arrived at the abbey of Hautvillers, near Épernay, as treasurer; He found the convent and the vineyards in a state of total abandonment and worked to restore them.
His work was mainly directed to the production of wine; As a perfectionist that he was, he applied himself to the selection of the best grapes (his choice fell on Pinot Noir), to favoring the most suitable land for production, to refine the techniques of blending wines (assembly of grapes of the same type from different areas), and to prefer a sweet pressing to obtain a clear must even if from black grapes (all characteristic techniques, even today, of the production of champagne).
From that moment on, other vineyard owners in the area also began to produce wine following the indications of the abbot and the new producers contributed to the refinement and improvement of the champagne production technique.
